Artisan cheese producer Napoli Antica provides a sophisticated taste with its Scamorza cheese. Its name comes from the verb “scamozzare”, which means “to cut” or “to be beheaded”. At the end of the cheese making process, the cheese is rounded and tied by a rope. Afterwards, it is submerged into brine about one third of its mass, and then removed and hung to dry. In the end, it turns into a pearshaped cheese that gives the cheese its name.
Traditionally, two Scamorzas are tied together and presented as a whole. At its essence, it is a ripened, dried cheese made from buffalo milk. Its yellow rind provides a ripened taste, and its inner soft white cheese adds freshness to Scamorza.
